SALAD INGREDIENTS:
1 bunch asparagus, cut into 3
1 yellow pepper, seed removed and finely diced
1 pound (2 cups) baby/cherry tomatoes, halved
1 avocado, de-stoned, peeled and diced
8 ounces baby bella mushrooms, sliced and lightly sautéed
1 tablespoon fresh lemon thyme or regular thyme leaves
SALAD INSTRUCTIONS:
1. Blanch the asparagus in boiling water for 2 to 3 minutes. Remove the asparagus from the boiling water and add into cold ice water to stop the cooking. Mix together the cherry tomatoes, avocado, mushrooms and thyme leaves.
2. Arrange the asparagus on a platter and spoon all the other ingredients over.
3. Top with the onions mixed in with the dressing just before serving.
4. Garnish with micro greens or watercress.
DRESSING INGREDIENTS:
4 tablespoons balsamic vinegar
2 tablespoons cold-pressed olive oil
1 teaspoon maple syrup
1 small red onion, peeled and finely diced
1 small garlic clove, peeled and crushed
herbal salt and freshly crushed black pepper to taste
DRESSING INSTRUCTIONS:
1. Combine all the dressing ingredients in a mason jar and season to taste
2. Close the jar with a lid and give the bottle a good shake.
