This recipe is the perfect balance of savory and sweet, featuring a creamy tahini dressing and a fresh tomato topping. Baked Sweet Potatoes
Bake sweet potatoes in the oven.
TAHINI DRESSING INGREDIENTS:
1/3 cup of runny tahini
1 medium lemon, juiced and the zest of ½ a lemon
2 tablespoons maple syrup/raw honey
Pinch of pink Himalayan salt
Pinch of paprika
1 garlic clove, zested or finely chopped
12-16 tablespoons water to thin the sauce
Few cracks of black pepper
2 teaspoons fresh parsley minced – optional
INSTRUCTIONS:
Mix all ingredients thoroughly with a whisk until smooth

1 cup cherry tomatoes
Lemon zest
Garlic zested or finely chopped
1 tablespoon olive oil
2 tablespoon parsley finely chopped
