This delicious and healthy baked sweet potato recipe is a new episode of Living Leré's YouTube show, and we are so excited to share it with you! Not only are these potatoes incredibly delicious, but they also offer a variety of health benefits. Sweet potatoes are a good source of nutrients that can help with the production of serotonin, which in turn helps regulate your mood and can even help you get a better night's sleep. This recipe is the perfect balance of savory and sweet, featuring a creamy tahini dressing and a fresh tomato topping. It's easy to make, incredibly satisfying, and sure to become a new favorite in your home.


Baked Sweet Potatoes   


Bake sweet potatoes in the oven.

 

TAHINI DRESSING INGREDIENTS:

  • 1/3 cup of runny tahini

  • 1 medium lemon, juiced and the zest of ½ a lemon

  • 2 tablespoons maple syrup/raw honey

  • Pinch of pink Himalayan salt

  • Pinch of paprika

  • 1 garlic clove, zested or finely chopped

  • 12-16 tablespoons water to thin the sauce

  • Few cracks of black pepper

  • 2 teaspoons fresh parsley minced – optional

 

INSTRUCTIONS:

Mix all ingredients thoroughly with a whisk until smooth

 


TOMATO TOPPING INGREDIENTS:


INGREDIENTS:

  • 1 cup cherry tomatoes

  • Lemon zest

  • Garlic zested or finely chopped

  • 1 tablespoon olive oil

  • 2 tablespoon parsley finely chopped

  • Avocado


INSTRUCTIONS:

Mix all ingredients thoroughly.  Adding avocado right before serving.

 

FINAL INSTRUCTIONS:


Add topping to sweet potatoes.
