No Bake Granola Bars

Created with real, nourishing ingredients like dates, almonds, and muesli, these bars are as satisfying as they are simple. With no baking required and a quick prep time, this recipe is perfect for anyone with a busy lifestyle who still wants to fuel their body with goodness. Whether you’re heading to work, packing lunch for the kids, or craving a clean snack after yoga, these bars are sure to become a staple in your kitchen.
INGREDIENTS:
½ cup raw almond butter or another nut butter
½ cup raw honey
1 cup crispy brown rice cereal
1 cup unsweetened gluten-free muesli or ½ cup old fashioned oats and ½ cup mixed raw sunflower seeds, sesame seeds and sliced almonds
½ cup dried dates or figs, chopped
¼ teaspoon slat
Coconut oil
INSTRUCTIONS:
Add the almond butter and honey to a small pot. Stir for about 2 minutes over low to medium heat until smooth.
Combine cereal, muesli, almonds, dates and salt in a bowl.
Add the mixture of almond butter and honey. Stir well to combine.
Grease a 8x8 inch square baking dish with coconut oil and line with parchment paper.
Spread the granola mixture evenly into the dish and cover with a piece of parchment paper.
Refrigerate overnight
Peel off parchment paper and cut into bars.
