Chia Seed Pudding

If you're looking for a healthy, make-ahead breakfast or a refreshing snack that feels indulgent but is packed with nutrients, this Chia Seed Pudding is about to become your new favorite. It’s creamy, lightly sweet, and endlessly customizable with your favorite toppings—think fresh fruit, crunchy nuts, a drizzle of maple syrup, or a sprinkle of granola. This recipe is one of my go-to for busy mornings or when I want something nourishing and satisfying without any fuss. Even better? (Serves 4 GF)

 

CHIA SEED PUDDING INGREDIENTS:

 

  • ¼ cup chia seed.

  • 1 cup vanilla oat milk

  • 1 cup plain unsweetened cashew yogurt or plain Greek yogurt

  • 1 teaspoon vanilla extract.

  • 1 pinch of salt.

 

 

INSTRUCTIONS:

 

1.      Whisk all the ingredients together, cover and place in fridge overnight until thick.

2.      Just before serving, give a good stir. Serve in a parfait glass topped with chopped figs and toasted almonds, pecans or walnuts or sliced strawberries, whole raspberries, a little drizzle of maple syrup or raw honey and/or granola of choice. Garnish with a fresh sprig of mint.
