FRESH CORN SALAD

Nothing says summer freshness quite like a vibrant Fresh Corn Salad. Packed with juicy corn kernels, crisp red peppers, creamy avocado, and fragrant herbs, this recipe is both simple and satisfying. FRESH CORN SALAD INGREDIENTS:
4 whole ears of corn, husks removed
1 large red pepper, seed removed, finely diced
1 small red onion, peeled and finely diced
Handful of fresh parsley or cilantro, finely chopped
Handful of fresh basil leaves, finely chopped
2 avocados, peeled, diced
SALAD INSTRUCTIONS:
Boil the corn for about 3 minutes. Let the cool
Cut the corn off the cob, add to a salad bowl
Add the rest of the herbs, onion, red pepper seasoning and avocado.
DRESSING INGREDIENTS:
2 tablespoons of olive oil
Juice of 1 lime
1 teaspoon raw honey or maple syrup
1 garlic clove, peeled and crushed
1/8 teaspoon paprika
Pink salt and freshly crushed black pepper to taste
DRESSING INSTRUCTIONS:

Mix all the dressing ingredients together, pour over the salad and gently mix until the salad is well coated.
The corn can also be eaten raw off the cob.
