HERBY FIG SALAD
SALAD INGREDIENTS:
4 cups spring/leafy greens
1 handful baby arugula
2 cups fresh figs, cut in quarters
½ cup mint
½ cup parsley
4 spring onions, finely sliced
1 avocado, de-stoned, peeled and diced
1/3 cup toasted pecans or pistachios or walnuts finely chopped
INSTRUCTIONS:
1. In a bowl, mix greens, mint, parsley, spring onions and scatter on salad platter.
2. Top with chopped figs and avocado.
DRESSING INGREDIENTS:
1/3 cup cold pressed olive oil
Zest and juice of 1 medium lemon
2 teaspoons finely grated fresh ginger
2 teaspoons maple syrup or raw honey
1 garlic clove crushed
¼ teaspoon salt
¼ teaspoon pepper
DRESSING INSTRUCTIONS:
1. Add all the dressing ingredients to a high-speed blender and blend until smooth. You can also mix in a jar. Then add the lid and shake.
2. Pour dressing over salad and serve.
