HERBY FIG SALAD


SALAD INGREDIENTS:

  • 4 cups spring/leafy greens

  • 1 handful baby arugula 

  • 2 cups fresh figs, cut in quarters

  • ½ cup  mint

  • ½ cup parsley

  • 4 spring onions, finely sliced

  • 1 avocado, de-stoned, peeled and diced

  • 1/3 cup toasted pecans or pistachios or walnuts finely chopped

 

INSTRUCTIONS:

1. In a bowl, mix greens, mint, parsley, spring onions and scatter on salad platter.

2. Top with chopped figs and avocado. 

 

DRESSING INGREDIENTS:

  • 1/3 cup cold pressed olive oil

  • Zest and juice of 1 medium lemon

  • 2 teaspoons finely grated fresh ginger

  • 2 teaspoons maple syrup or raw honey

  • 1 garlic clove crushed

  • ¼ teaspoon salt

  • ¼ teaspoon pepper

 

DRESSING INSTRUCTIONS:

1. Add all the dressing ingredients to a high-speed blender and blend until smooth.  You can also mix in a jar.  Then add the lid and shake.

2. Pour dressing over salad and serve.
