INGREDIENTS


  • 1 large ripe mango, peeled, finely chopped

  • 2 cups baby/cocktail tomatoes, halved or quartered.

  • 1 red pepper, seeds removed, finely chopped

  • A handful of cilantro, finely chopped

  • 1 small red onion, peeled, finely chopped

  • 1 avocado, pit removed, diced

  • 1 garlic clove, peeled, crushed

  • Juice of a small – medium fresh lime  

  • Freshly crushed black pepper to taste

  • ¼ teaspoon Celtic salt

  • 1/8 teaspoon red pepper flakes or a little fresh chili

  • Optional: A dash of freshly zested ginger root
