Tabbouleh Salad

(Serves 4 – 6 GF)
INGREDIENTS:
§ Chickpeas
§ Brown Lentils
§ Cucumbers
§ Baby tomatoes
§ Onion or spring onions
§ Parsley
§ Mint
§ Avocado
INSTRUCTIONS:
1. Add all the ingredients to a salad bowl.
DRESSING
INGREDIENTS:
4 tablespoons extra virgin olive oil
1 tablespoon raw honey or maple syrup
5 tablespoons fresh lemon or lime juice
¼ teaspoon pink salt
¼ teaspoon black pepper
1 garlic clove, peeled and crushed or 1/8 teaspoon garlic powder
1 cup of crumbled vegan feta cheese - optional
INSTRUCTIONS:
2. Mix all ingredients together and pour over the salad
3. Using salad tongs, lightly toss all the ingredients together and serve.
